Chanterelles are a beautiful wild mushroom, that has an aroma of apricots when fresh.  A favorite in Europe and the US, chanterelles have a long season both in the Midwest and the Pacific NW stretching almost 6 months.  A true star in the kitchen, chanterelles are best at home with eggs, potatoes, cream and cheese.  Saute and eat with pierogis, or utilize in an omlet or potato gratin to maximize the flavor of these mushrooms.
